Directions

For the caramel sauce:

  1. Cut the butter into 6 tablespoons and set aside.
  2. Heat 1/2 cup heavy cream slightly and set aside.
  3. Place 1 cup sugar in medium saucepan and cook over medium low heat until sugar has dissolved and caramel is a light amber color.
  4. Remove from the heat and stir in butter one tablespoon at a time until it melts completely. Caution: the mixture will bubble up and is very hot.
  5. Carefully pour in slightly heated heavy cream while continuously whisking. If necessary, take back to the heat until liquid and fully incorporated.
