Ingredients

  • 1/2 cup
    butter
  • 1 cup
    granulated sugar
  • 4
    egg whites
  • 2 tsps
    vanilla extract
  • 1-1/2 cups
    all-purpose flour
  • 1-1/2 tsps
    baking powder
  • 1/2 tsp
    salt
  • 3/4 cup
    milk

Directions

1.

Heat oven to 350 degrees.

Line muffin tin with paper muffin liners.

Beat butter and sugar until light and fluffy in a large mixing bowl. Add egg whites, one at a time, scraping the bowl between each one. Mix in vanilla and set butter mixture aside.

Whisk together flour, baking powder and salt. Gradually add butter mixture, alternating with milk.

5.

Fill muffin tins two-thirds full.

6.

Bake for 18 to 20 minutes or until toothpick comes out clean. Let cool completely on wire rack.
