Ingredients

  • Sugar Cookies:
  • 2 cups
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 cup
    butter, at room temperature
  • 3/4 cup
    granulated sugar
  • 1
    egg
  • 1 Tbsp
    milk (2%)
  • 1 Tbsp
    grated lemon zest
  • 1 tsp
    vanilla extract
  • Royal Icing:
  • 2
    pasteurized egg whites
  • 1/4 tsp
    cream of tartar
  • salt
  • 2 cups
    icing sugar, sifted
  • 2 Tbsps
    lemon juice

Directions

Royal Icing:

1.    Beat 2 egg whites, ¼ tsp cream of tartar and salt with electric beaters on low speed or until light and foamy.

2.    Increase speed to high and beat until soft peaks start to form.

3.    Tip: Tint icing with food coloring if desired.

4.    Reduce speed to low and gradually beat in 2 cups icing sugar; add 2 tbsp lemon juice.

5.    Increase speed to high; beat until smooth and spreadable. Thin with water if needed.

6.    Cover with plastic wrap until ready to use.

7.    Spread or pipe icing onto cookies and decorate with reserved toffee bits.
